With summer just over I have plenty of beautiful and heavenly scented Lavender blossom in my garden. Together with Calendula flowers picked and dried during the summer these ingredients will make a very tasty cake in the most beautiful colors of late summer. If you do not have Calendula flowers at hand, just leave them out of the recipe, and this cake will be equally delicious with just Lavender flowers.

Instructions
  1. Preheat your oven to 170° Celsius / 340° Fahrenheit and start with preparing your pan. Grease your pan evenly with butter. I have used a loaf-shaped, rectangular 15x30 cm / 6x12 inch pan.

  2. Add some flour to your pan and move the pan until it is completely covered with flour.

  3. Set aside your pan and start preparing the batter.

  4. In a mixing bowl add 330 gram of flour and 1/2 a teaspoon of baking powder.

  5. Add 1/2 a teaspoon of baking soda and a pinch of salt and stir together all these dry ingredients in your bowl. Set aside.

  6. In a second bowl cream 100 gram of butter with an electric hand-mixer until it's fluffy.

  7. Slowly add 300 gram of sugar to the butter and mix for a few minutes.

  8. Add four eggs

  9. and keep mixing until nicely incorporated.

  10. Gradually add the flour /dry ingredient mix from your second prepared bowl

  11. and also add 200 gram of yoghurt and mix it well.

  12. Once everything is nicely stirred together, add lemon juice of 1/2 an organic lemon, lemon zest and a teaspoon of vanilla sugar.

  13. Now add two tablespoons of fresh and / or dried lavender blossoms. Keep a few blossoms for the top of the cake and for decoration. Make sure to breathe in deeply and fully enjoy the lovely late summer scent.

  14. Then add two tablespoons of dried Calendula leaves. Also here keep a few blossoms for the top of the cake and for decoration.

  15. Gently stir the beautiful blossoms into your dough.

  16. (Optional) Add and stir in a drop of lavender essential oil to make the taste and scent even more intense.

  17. Pour the batter into your prepared pan.

  18. Sprinkle a few more blossoms of both flowers on top of the dough and then put your pan into the oven preheated to 170° Celsius / 340° Fahrenheit.

  19. Bake the cake for about one hour until it begins to brown on top. There will be a very lovely, heavenly scent of baked cake and lavender in your house. Check if the cake is ready by picking a toothpick or a larding pin deep into the cake. If it comes out clean, your cake is ready, if there is still dough sticking to it, extend the baking times in 5 minute segments and repeat the pin check.

  20. When your cake is ready take it out of the oven and put it to the side for cooling.

Icing and cake decoration
  1. For the icing prepare 50 grams of powdered sugar and 1/2 an organic lemon.

  2. Slowly add drops of lemon juice to the sugar and keep stirring and adding until a nice thick consistency is reached.

  3. When your lemon icing is ready prepare a few more leaves and flowers for the decoration of your cake.

  4. Now drizzle the lemon icing over your cake.

  5. Decorate the cake with lavender flowers.

  7. Let the cake rest for about 2-4 hours, so the icing can dry.
