With beautifully colored leaves making a gorgeous autumn this year, pumpkins are seen everywhere. So the Natural Owl had to go out, grab a lovely orange colored pumpkin for herself and get cooking. The vegan pumpkin pasta makes a wonderful warm and creamy dish for lunch or dinner and boosts your health with great organic and nutritious ingredients. As a little extra I have sprinkled some pine seeds on top, you can also swap them for walnuts, pekans, sesame, or any nuts or seeds of your like, or you just skip them and enjoy the pumpkin pasta by itself. To boost the nutrition value of the dish I have used a vegan whole wheat pasta.

Easy Vegan Pumpkin Pasta
Start with preparing all your ingredients.
Peel and finely chop a small onion.
Heat up a tablespoon of olive oil in a non-sticking pan. Also set up a pot with water, for boiling the pasta later.
On medium heat roast the onions in the pan now. Stir well from time to time and take care that they stay golden and won't get brown.
Now with a sharp knife cut off the pumpkins peel. Take good care of your fingers and don't forget to enjoy the wonderful color 🙂
With a tablespoon spoon out the pumpkin seeds.
Then chop the pumpkin to squares that are all about the same size.
Now put your pumpkin squares into the pan, which is still on medium heat.
Roast the pumpkin and keep stirring once in a while for about 5 minutes, so everything will get roasted evenly.
Add 3 teaspoons of salt and stir well.
Sprinkle four tablespoons of flower evenly over the pumpkin, so everything gets coated.
Now stir the mixture over medium heat so the flour coats the pumpkin and gets a bit roasted as well.
When everything has been roasted for two minutes and is mixed togehter well you can go on adding the liquid.
Pour in 100 ml of almond milk and stir well.
Add some freshly ground pepper.
And also add 1/2 a teaspoon of ground nutmeg to your pumpkin mixture. Stir it in, put a lid on your pan and let it simmer on low heat until your pasta is cooked.
Put a teaspoon of salt into the boiling water and add your pasta as well. Set the timer on the suggested cooking time for your pasta.
When your pasta is ready cooked, then strain it.
Add your cooked pasta to the creamy pumpkin.
Now carefully stir them together.
Stir until everything is well combined
Arrange your creamy pumpkin pasta on a plate.
If you like, you can add some pine kernels, or any nuts, or seeds of your liking.
Enjoy your creamy vegan pumpkin pasta with a nice bowl of salad.
