Maybe you are craving a little sweet but healthy something after the holidays with too much sugar and calories? So I have created a vegan, sugar-free, fruit muffin recipe for you which is not just healthy, but  delicious as well. It is stirred together in just 20 minutes time. And my choice of fruits had been dried apricots and plums. Alternatively you can swap these for any choice of your favorite fruits.

If you want to make your vegan fruit muffins a little sweeter, simply put a few raisins on top of each muffin before baking. Or you place a teaspoon of fruit jam on top after baking. Enjoy the lovely scent in your kitchen and the wonderful taste of your muffins.

Especially at this time of the year I’m joyfully celebrating the art of slow living. I’m taking some time to look out of the window and watch the trees bend in the cold winter winds. The soothing, monochrome appearing winter days hold their own silent beauty. Especially after the stressful and hectic time and days of December.

A birdsong makes me smile now and then, when little visitors come to my garden to feed and rest. My lovely little toddler, who – by the way – loves the vegan fruit muffins as well, just starts to notice the birds outside in the trees. So I will do my best to start and fire his interest in nature and wildlife. I am wishing you a slow, peaceful and beautiful January. Maybe take some time to bake something, fill the house with lovely scents, drink a soothing mug of tea.

Instructions
  1. First of all start reparing the following ingredients: 250gr (2 cups) whole grain flour, 2tsp baking powder, 3tbsp maple sirup, 1tsp salt, 3tbsp applesauce, 80ml (0.3 cups) neutral vegetable oil, 200ml (0.85 cups) plant based milk, 200gr dried fruits, 6tbsp fruit jam (optional) and preheat your oven to 180 degrees Celcius / 350 degrees Fahrenheit

  2. Then cut the dried fruits to rough pieces.

  3. The pieces of dried fruit can be different in size, just roughly chop them up.

  4. Now in a bowl stir together 250gr (2 cups) whole grain flour, 2tsp baking powder, 1tsp salt and the fruitpieces.

  5. In a cup mix together 3tbsp applesauce, 2tbsp maplesirup and 80ml (0.3 cups) of neutral vegetable oil. Keep stirring until well combined and then add it to the dry ingredients.

  6. Add 200ml of plant based milk to your bowl with dry ingredients and oilmixture.

  7. Stir it all together until all ingredients are well combined.

  8. Then fill muffin paper forms to 2/3 up with your dough. If you have a muffin baking tray, you can use 1 paper form per muffin, if you have no muffin baking tray, then put 2-3 muffin paper forms into each other before filling, so the form will stay stable even without the supporting tray. If you like, you can top each muffin with a few raisins.

  9. Now put your muffins into the oven at 180 degrees Celcius / 350 degrees Fahrenheit.

  10. After 15 to 20 minutes take your muffins out of the oven and let them cool down inside the rack.

  11. Enjoy some delicious vegan fruit muffins with a mug of tea for dessert or breakfast.
